What a GREAT food list! These are most of our favorite foods! Sounds like Lucy and my son Ben have pretty much the same diet.
We have eliminated all forms of dairy and haven’t yet brought in animal protein, but we will see what the future holds.

We eat fruit too. I just have her eat it with fat…usually coconut milk, flax seed oil, or nuts/nut butter. Banana is great with nuts and agave…yummy!!
i’ll let you know if i find kelp elsewhere. i’m thinking it might be best to not over-do the kelp, because some take kelp capsules for thyroid issues. i’m feeling really good still with this way of eating. my insulin doses are down to 1 unit of lantus twice a day and 1-2 units of fast acting novolog 3X a day when eating. that’s a big reduction. i’d like to work with dr gabriel cousens also if ever it is possible. i’ll re-watch the video sometime and try and see if they ate fruit. seems like maybe fruits were not eliminated. hopefully!!
what about green and red peppers? also i found some raw kelp at the food cooperative this weekend — it tastes different but appears like vermiccelli noodles. i added some brown mustard, olive oil, thin sliced carrots and cucumber, and some walnuts.

What we do is cut the spaghetti squash in half (lengthwise)…please use a sharp knife and watch your fingers…we place each half on a plate cutside down (one at a time) and put about 1/4 cup of water around it…obviously you need a plate or platter that comes up a bit on the sides. Then we microwave each half for about 10 minutes. I don’t think microwaving is necessarily the best for foods…but it’s the quickest. You can also bake it in the oven…it takes longer (like 45 minutes or so) and if you cook in the oven, you can do both halves at one time….after it’s finished cooking, carefully remove insides of squash with a fork (it will be stringy like spaghetti)…add olive oil or butter and seasonings…you can add cheese and sauce too if you like. I hope this helps. We’re thinking about doing a video on how to make it. It’s so good. I hope you enjoy!!:) And thank you for your input and advice about the agave. I will keep an eye on her BG’s after she eats agave. So far, so good, but I may have to use a little less agave and a little more stevia in the future:)
how do you fix the spaghetti squash? glad she can have agave. i used to use agave to raise my BG when it was too low. but agave made it go up about 200 points higher than the low; then i took more insulin to take care of that, etc. again, so glad you are finding the right things to eat. thanks for sharing the foods you enjoy and foods you avoid. very helpful. lucy
