I have to note that you can definitely make these WITHOUT the dates for a low carb snack (since dates contain lots of natural sugars)….we sometimes use nut butter along with the walnuts (almond or cashew is great), and sometimes we will add coconut oil and coconut flour. Just make sure they aren’t too greasy or too dry and adjust ingredients accordingly.

A few weeks ago, after writing a post on the fact that they’re discontinuing one of my favorite energy bars, I set out to try and recreate said chocolate bars. With only five ingredients, it couldn’t be too difficult, could it?
As it turned out, the results didn’t taste like the packaged bars… mine tasted better!
(For once, eating raw dough is not only allowed, it’s highly recommended )
Don’t let the diminutive size fool you; these babies are jam-packed with fudgey deliciousness. More chocolatey than Clif Nectar bars, more chocolatey than Larabar Jocalats… it’s like popping balls of pure chocolate bliss straight into your mouth. They’re so rich and decadent that even a tiny taste is enough to satisfy a skyscraper-sized chocolate craving.

But the fudge babies are so healthy that you don’t even have to stop after a tiny taste.
It’s hard to believe something so good for you—with zero added sugars and unnatural ingredients—can taste so sinful.
(They also happen to be quite a bit less expensive than Jocalats, Nectars, and many other such chocolate bars.)

Fudge Babies
(Serves… depends on how good bad non-existent your self-control is)
I rolled these into balls, but if you want true brownies, simply shape the dough into bars instead.

Ingredients:
- 1 c walnuts (120 grams)
- 1 and 1/3 cups pitted dates (230 grams) (If you want a sweeter result, up the proportion of dates.) (If you’re unsure as to what dates to use, or you want measurements in cups, not grams, see fudge baby FAQ Post)
- 1 tsp vanilla extract
- 3-4 tablespoons cocoa powder, depending on how chocolatey you want the balls to be (I used 4T extra dark)
Directions:
1. Chop/blend all the ingredients, using a food processor, Magic Bullet, etc. (No need to blend the dates first; I just blend everything all at once.)
2. Roll into cutey-pie little balls. (Use plastic wrap if you need to.)

Hot Cocoa Fudge Babies!
I’ve been toying around with the original recipe. Here is my newest-favorite variation:
30 grams cashews, 80 grams dates, 5 grams (1T) dark cocoa powder. Blend. Even fudgier than the original!
(Add mint extract and cacao nibs and you’re getting into Wild Bar territory. And if you leave out the cocoa, you have a homemade Cashew Cookie Larabar!)
